The goal with this recipe is to pack in as many nutrients and pack in as little fuss in the prep, so I very much eyeball it. Ultimately, I'm looking for a certain consistency. Very scientifically, I would describe it as, not too runny, but not too gloopy. Makes about 20 coffee mug sized pancakes. I'm vegetarian, but not vegan, so I use eggs. However, you could easily substitute with a chia egg. If I add chocolate chips I don't put them directly in the mixture, but rather add them at the end before flipping the to the second side. Served with a banana and unsweetened apple sauce or mango sauce, occasionally with honey or maple syrup.
I add the wet ingriedients before the dry, and whizz it in the food processor:

Cailler dark chocolate chips (the superiour choc chip choice ;)
Frozen Blueberries
I make this recipe at least 3 times a week. I also use the same ingredients/ mix for muffins, depending on our mood. The kids help me a lot with the prep. We use a Roam or Wriggle mat to catch any spills and the stand on our Architoys foldable kitchen tower (which is incredible).
